I’m not sure where my Grandma got this recipe from, but I call them “Grandma’s” because it’s the recipe she’s always used. From as long as I can remember, she made these cookies when we’d come to visit. And I’ve always loved them. I think I love them more and more every year because it’s one of the few things in life that brings a flood of memories with every bite; Grandma’s house, they way her clothes smell, fishing trips with cookies included in our much anticipated lunches…Papa.
These cookies are the very epitome of comfort food for me. Like a blanket of comfort for whatever ails me. Challenging day with the kids? Grandma’s cookies! Gloomy weather? Grandma’s cookies! Time of the month? COOKIES! I’m not saying they will be the same for you, of course. Just sharing what they mean to me. And that they are scrumptious!
Here’s the recipe:
2 1/4 cups all purpose flour
2 cups quick-cooking oats
2 cups firmly packed brown sugar
1 tsp. baking soda
1 tsp. salt
1 cup softened margarine or butter (for a healthier version I sometimes substitute half/all with applesauce)
2 tsp. vanilla
2 eggs
6-oz. package (1 cup) semi-sweet chocolate chips
1 cup flaked coconut (optional [amount is also optional])
1/2 cup walnuts (optional)
1. Heat oven to 350 degrees.
2. Mix wet ingredients and brown sugar first, then add in all the dry ingredients to the wet, except for 1 cup flour, 1 cup oats, chocolate chips, nuts and coconut. Beat at medium speed till well blended. By hand stir in remaining ingredients, Drop dough by rounded tsp.-2 inches apart unto ungreased cookie sheet.
3. Bake at 350 degrees for 10-15 minutes or until golden brown. Cool for 1 minute. Remove from cookie sheet.
